IMAG0306Sunday, and Saturday Brunch, is my favourite of meals. There are no rules to Brunch, brunch rules all and everything goes. It is best eaten whilst listening to some relaxing music or a great programme on Radio 4, at least thats my thought on the matter, include an incredible view like the one I am blessed to have from the dining table in my flat and you are set for an enjoyable meal experience.

Today unlike pretty much every weekend brunch, I dined alone as my brunch partner in crime is flying back from Germany. This however is great news for you as has meant I have found time to tap out the method to recreate this delightful dish.

blog sunday brunch 1Below is a method to recreate the delicious dish in your very own home! I’ve made it for two so there is certainly one extremely lucky person who gets to enjoy this meal with you.

 

 

1 fillet of wild salmon

a freshly boiled kettle of water

2 handfuls of organic broccoli florets

a few sprigs of finely chopped parsley

a perfectly ripe avocado

a red chili, chopped finely

2 organic eggs

a knob of organic salted butter

I sometimes cook the salmon the day before and have some of it for lunch or supper but if you are making it fresh my advice would be to place the fillet in a wok or deep frying pan with 250ml warm water (or simply throw in a cup of warm water if you are not a measurement type of person). Place a lid over the pan and leave to simmer on a medium heat for 15 mins or until the fillet changes colour. Lift out of the pan and allow to cool whilst you see to the other elements of the dish.

You can so a couple of fillets and keep the second one for your wonderful salmon and quinoa salad lunch box for Magical Monday!

In a large frying pan or wok heat your knob of butter over a medium heat, at the same time pop the broccoli florets in a suitably sized pan with enough of the just boiled water to cover them. Add a pinch of salt, this will reduce the leaching of minerals.

Mean while crack your eggs one at a time into the hot pan with butter and cook until the edges start to crisp and go brown, I grew up in Thailand so didn’t develop a like for the all white and slightly rubbery fried eggs I often come across in Europe but each to their own so if you think crispy eggs are gross then don’t follow my lead on that.

Arrange the avocado on two plates in a fun shape, I love to fan them out. Flake the salmon onto the plates, drain the broccoli and arrange in a mound on the other side of the plate, top everything with the eggs and sprinkle the whole lot with the parsley and chilies. season with heaps of freshly ground black pepper and organic sea salt.

Boom, you are ready. Enjoy the company of either yourself or the lucky person who gets to share this meal and your company.

Eating slowly and with joy and calm is beneficial to digestion, the reason for this is when the body is not stressed it does not relsease stress hormones such as adrenaline, noradrenaline and cortisol. These hormones are very useful when you are cycling and need to be sharp to dodge a pedestrian, black cab or bus who hasn’t seen you coming, or if you fall into a cold lake and need a boost of energy to get you out as fast as possible but the side effects of this is the body shuts down to minimal functions supply and action of the digestive and reproductive system. This helps to explain why we are advised to eat sitting down, slowly and never whilst angry or stressed.
