Making lunchboxes alway seesm to put a feeling of dread in people, me not so much. I get super excited and cannot wait for it to be lunch time so I can enjoy the box of wonder often throw together in the morning and snuggly fit between books and juice jars.
The one I get to enjoy today was super simple and easily manageable buy ANYONE. Recently my fridge has been looking mightily empty save the obligatory head of broccoli, this is probably my all time favourite veggie. I have fond memories of “eating my trees” as a child and continued this throughout life experimenting along the way, I will add that like every chef there were a few disasters along the way.
I had a sweet pototo, an avocado, a few lemons, the afore mentioned broccoli and heapds of different seeds and nuts kicking about so whilst my boyfriend and I enjoyed a Sunday night movie I cut up the sweet potato into large bit sized chunks and popped it in the over with a weeny bit of salt and coconut oil. I left them for around 35 mins at 160 degrees celcius in my non-fan oven, checking and turning them and few times to ensure even cooking. Next I floretted half a head of broccoli and steamed it keeping it very crisp. once these had cooled I popped them in the fridge to cool.
This morning I pulled the box with the roasted sweet potato and broccoli and sliced up half a perfectly ripe avocado and popped that in, a swift rumage in the nut and seeds section of the cupboard and I came out with toasted sesame, raw pecans and pumpkin seeds. A squeeze of lemon and then a generous sprinkel of each of my selected nuts and sees and I was thrilled for lunchtime to arrive!
This is such a simple meal but brings me so much pleasure, try it at home. all you need is:
1 small/medium sweet potato
1/2 avocado
1/2 small head of broccoli, floretted (I also use the stalks)
1/2 lemon
whatever seeds or nuts take your fancy.
Broccoli is incredible for its powerful use as an antioxidant as well as its sulfur based compounds which are used in stage two liver detoxification, the phase in which harmful toxins are expelled from the liver and body. Many of us suffer from sluggish stage two detoxifictaion leading to a build up of toxins which are conjugated through phase one liver detoxification which in some cases can make them even more toxic.
If there is one thing you do today, ADD BROCCOLI! xx
